Does anyone know where I can find a UI mod or something that allows me to quickly check the auction house prices of items that drop? I'm afraid I'll sell something on accident to vendors that could have otherwise been sold in AH for a much better price, which I have done in the past. I would ever so much appreciate it if someone could point me out to a mod like this.

Welcome.
I recommend using Auctioneer. Go to http://auctioneeraddon.com/dl/ and download AuctioneerSuite-x.x.xxxx.zip. It will:
- Add all kinds of market info to an item
- Estimate what it disenchants into
- Add a tab to the AH (called "the Appraiser") that makes it easier to post auctions.
It requires you to scan the AH on a regular basis. The more often you do the more accurate it's prices are.
It's a bit of a bulky addon, so if your REALLY only want to know the AH-price of something you either have to get a "less features" version like Auctioneer-x.x.xxxx.zip or some other addon like WowEcon.

Yes, Auctioneer as recommended. Do two or three manual scans to start. This can take some time, maybe 20 minutes per scan. Thereafter, if you go to the AH frequently (I do it daily on one of my alts) it will scan automatically in the background as you search or put things on sale.|||/Also recommend Auctioneer as well.
Don't forget to congidure it to show tool tips on mouseover, otherwise it won't show scan data by default when you mouse over something.|||Adding a bit in response to Wintrow's post (edit time expired)
While it's a good idea to scan, you don't really have to scan. Auctioneer will self scan on it's own and when you browse/search for an item it scans and updates for that item.
Still though it's a good idea to scan anyway and every so often, this way you have a better/more accurate database for more items versus not scanning.|||Thanks, guys. I can't npc vend, I can't get into auction npc menu, anyone know why?|||Auctioneer shouldn't cause any problem like that, I use it and have not had a problem.

I understand that this happened coincidentally with your installing Auctioneer, but I think it probably is just coincidence and something else is causing your NPC problem. It's not something I (or anyone else I know - and most that I know in the game have this addon) have ever experienced.|||It could be caused by really high latency/server lag.
Especially noticeable if you can't talk to or interact with anyone or anything.
Adding to Wintrow's post: Auctioneer does not estimate what an item will Disenchant into. Enchantrix does that. Though Enchantrix is included with the complete package download of Auctioneer, also Auctioneer came (still does??) in a seperate download with only Auctioneer and it's base mods, I.E., no Enchantrix or Informant modules.
